Meet our Dietitian - Ethan

1. Could you tell us about your path to becoming a dietitian, focusing on how your education and background guided you to specialize in nutrition for college campuses, particularly with Aramark?

a. I obtained a Bachelor of Science degree in Nutrition, followed by acceptance into the UCA MS/DI program, where I was the sole pre-selected candidate from my graduating class. Through rigorous supervised practice, I earned a Master of Science in Nutrition. Shortly after graduation, I successfully passed the national registration examination and commenced my career as a Registered Dietitian Nutritionist at Arkansas Heart Hospital. Within two years, I advanced to the position of Lead Dietitian, contributing to the development of several enduring programs. Subsequently, I assumed the role of Clinical Nutrition Manager at a prominent U.S. hospital in South Carolina before transitioning to my current position as District Dietitian, serving multiple universities in Arkansas.

2. What motivated you to specialize in catering to the dietary requirements of college students as your career focus? Additionally, could you elaborate on the distinct challenges and opportunities you face within this environment?

a. The main reason I am currently working on college campuses is because this is a way for me to give back to the community that helped make me so successful. I can see myself in many of the students I work with. I know the struggles many of them face because I have faced them. I used to work 30+ hours every weekend (and somehow also study) to pay for my classes. I know what it's like to be a college student, but even more so a college student here in Arkansas. I am here because I want them to be successful in life!

3. What are some of your personal interests and hobbies that you're passionate about outside of your professional life?

a. I enjoy spending time with family and having great experiences. Whether visiting a great aquarium or spending time outside in nature, I can find the good in just about any environment. I also enjoy eating healthy and being active when I am away from work, so exploring the country and Arkansas is always fun. Basketball is probably one of my favorite organized sports to play but I also kick around a soccer ball, toss around a football, and throw a baseball from time to time. I never go fishing I only go catching. And of course, I love building things and creating new landscapes with native plants and flowers. My entire yard is almost nothing but native plants and flowers. Yes, I raise monarch butterflies for fun. I built a full-size adult swing set at my house because I still like to swing. I guess I am ultimately a child with money when I am not at work. And I love driving fast – but only as fast as the speed limit allows. I also love swimming, it's probably one of the greatest feelings in the world. I am not huge into camping right now, but I will certainly pull up at a campsite with smores and roast some mallows. I am super laid back and easygoing to the point that most people wouldn’t recognize me outside of work.

4. Could you recount a memorable moment or experience from your time as a collegiate dietitian with Aramark that has left a lasting impression on you?

a. Many come to mind that are not necessarily unique to Aramark or working on a college campus. I have been working with students since the day I graduated from my graduate program. Seeing a student's reaction when they find out they succeeded in something I have been helping them with is one of the best feelings. Whether I helped them write a personal statement to gain entrance into their prized program or counseled them through their most difficult time of life. All the moments are memorable, and I hope I never forget them!

5. Who are some of the individuals you look up to or find inspiring, whether they're within the field of nutrition or in other areas of your life? What qualities or achievements about them resonate with you?

a. There are certainly too many to list here. My father and great-grandfather have taught me about life and helped me through many of my early struggles. My mother, grandmother, and great-grandmother are all women anyone would be proud to look up to for their dedication to their family and God. Many women and men are still here at UCA (teachers, mentors, professors) that I look up to who taught me a lot as I was making my way through undergrad. I started my college career at a small community college, and I even have individuals who come to mind who helped me pave my way to UCA and the nutrition field. I find inspiration in all parts of my life and that is what has led me here today.
